Spicy Shrimp Platter
- 5 tbsp butter, softened
- 3 cloves garlic, crushed
- 1-2 None red chili peppers, seeded and chopped
- 9 None thick slices ciabatta bread
- 1 tbsp olive oil
- 1 lb large shrimp, peeled and deveined
- 1 cup mayonnaise
- 2 tsp grated lemon peel
- 2 tbsp lemon juice, or to taste
- None None Cherry tomatoes, to serve
- Preheat the oven to 400u0b0F. Mix butter, garlic and chili pepper in a small bowl. Spread the bread with 2/3 of the butter. Place on a baking sheet. Bake for 6-8 mins until golden. Cut into fingers.
- Meanwhile, heat remaining butter mixture and oil in a large skillet on medium-high heat. Cook shrimp for 2-3 mins until cooked through.
- Mix mayonnaise, and lemon peel and juice in a small bowl. Place shrimp, ciabatta bread fingers and cherry tomatoes on a platter. Serve with lemon mayonnaise for dipping.
