Lamb Burgers With Olives, Zucchini And Peppers
- 1 lb ground lamb
- 1 None medium egg
- 1/4 cup breadcrumbs
- 2 tbsp olive oil
- 3.5 oz feta cheese, crumbled
- 1 oz pitted black olives, chopped
- 2 tsp thyme, chopped
- 1/2 None red pepper, deseeded and thinly sliced
- 1/2 None yellow pepper, deseeded and thinly sliced
- 1 None red chili, deseeded and finely chopped
- 1 lb zucchini, cut into long strips using a vegetable peeler
- Preheat the oven to 375u0b0F. Put the lamb, egg and breadcrumbs in a bowl, season to taste and mix well. Divide into 4 pieces and shape each into a burger.
- Heat 1 tablespoon of the oil in a frying pan and cook the burgers for 2-3 minutes on each side to brown. Transfer to a roasting pan. Combine the feta, olives and half the thyme and spoon over the burgers. Bake for 10 minutes.
- Heat the remaining oil in a saucepan and fry the peppers and chilies for 4 minutes, stirring. Add the remaining thyme and zucchini strips and cook for 5 minutes or until tender. Season to taste and serve with the burgers.
