Boston Beans With Sausages
- 4 None frozen hash browns
- 2 tsp vegetable or olive oil
- 1 small onion, chopped
- 4 slices bacon, diced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1/4 cup molasses
- 2 tsp Dijon mustard
- 1/4 cup firmly packed brown sugar
- 8 None thick beef sausages
- None None Steamed cabbage, to serve
- Preheat the oven to 450u0b0F. Place hash browns, in a single layer, on a greased baking pan. Bake, turning halfway through cooking, for 15-20 mins or until golden brown.
- Meanwhile, heat oil in a medium saucepan on medium heat. Add onion and bacon; cook and stir for 5 mins or until onion is soft and bacon is crisp.
- Add beans, molasses, mustard, sugar and 1/2 cup water; cook and stir until sugar has dissolved. Bring to a boil. Reduce heat to low; simmer, uncovered, for 20 mins or until sauce thickens.
- Heat a large skillet on medium heat. Add sausages; cook and turn for 6 mins or until browned and cooked through. Serve sausages with hash browns, beans and cabbage.
