Sloppy Joe Wraps With Yogurt Dressing
- 1 tbsp olive oil
- 400 g beef steak mince
- 1 small onion, peeled and finely chopped
- 2 None tomatoes, diced
- 100 g ketchup
- 150 g plain yogurt
- Pinch None salt
- 1 tbsp lemon juice
- 1 tsp sugar
- 1 tsp paprika
- 4 None large wheat flour wraps
- 150 g canned sweetcorn
- 100 g iceberg lettuce, shredded
- Heat the oil in a frying pan, add the beef and onion and saute, stirring, breaking up the meat with a wooden spoon for 4-5 mins.
- Add the tomatoes and ketchup and cook, stirring, for one more minute. Season to taste with salt and freshly ground black pepper. Allow to cool slightly.
- Meanwhile, mix the yogurt with the salt, lemon juice, sugar and paprika. Warm tortillas briefly in a dry skillet set over medium heat. Spoon the beef, yogurt, corn and lettuce along the center of each wrap leaving a border at top and the bottom. Fold the bottom and top over to enclose, then roll up. Cut in half diagonally.
- Wrap each in wax paper and secure with string.
