Vegetable Soup With Bacon And Croutons

  1. Melt the butter in a saucepan, add the onion, carrot and potato to the pan. Saute for 2-3 mins, stirring. Pour in the stock and simmer for 10-15 mins, stirring occasionally.
  2. Heat the oil in a frying pan, add the bread and saute for 2-3 mins, turning. Remove from the pan and drain on paper towels.
  3. Fry the bacon in the oil for 4-6 mins, until crisp.
  4. Stir in creme fraiche or sour cream and season the soup. Blend until smooth using an immersion blender. Divide the soup between 4 bowls and top each bowl with bacon, croutons and chervil. Serve.
