Balsamic Glazed Sausages With Salad
- 1/2 loaf French bread, torn into bite-sized pieces
- 1 lb sausage links
- 1/3 cup plus 1 tbsp balsamic vinegar
- 1 tbsp honey
- 2 tbsp coarse grain mustard
- 2 tbsp extra-virgin olive oil
- 4 oz baby spinach leaves
- 1 pint cherry tomatoes, haIved
- 1 small cucumber, seeded and cut into 3/4-inch pieces
- 1 small red onion, thinly sliced
- Preheat the oven to 400u0b0F. Arrange bread in a single layer on foil-lined baking pan. Bake for 8-10 mins, until very crisp and golden. Set aside.
- Lightly spray a large skillet with no stick cooking spray and heat on medium-high heat. Add sausages and cook, turning occasionally, for 3-4 mins. Place sausages on a foil-lined baking pan.
- Whisk 1/3 cup of the balsamic vinegar, honey and mustard in a small bowl. Drizzle over the sausages; turn to coat. Bake 3-5 mins, until glaze is reduced and syrupy.
- Meanwhile, in a large bowl, whisk oil and remaining 1 tbsp balsamic vinegar. Add croutons; toss to coat well. Add spinach, tomatoes, cucumber and onion; toss to combine. Serve salad with glazed sausages.
