Roast Turkey Thigh With Garlic Butter
- 2 None skin-on, boneless turkey thighs
- 2 sprigs fresh rosemary, leaves removed and finely chopped
- 2 cloves garlic, peeled and roughly chopped
- 1/2 cup garlic butter
- 2 tbsp olive oil
- 1/2 lb carrots, peeled and diced
- 2 None onions, peeled and cut into wedges
- 1 None celeriac, peeled and diced
- 1 None leek, sliced
- 1 2/3 cups white wine
- Preheat oven to 325u0b0F. Season turkey then place rosemary, garlic and garlic butter inside thighs, roll up and tie with butcher's twine. Heat oil in a roasting pan and sear turkey for 4 mins, turning. Add carrots, onion, celeriac and leek and saute for 3 mins. Transfer to oven and roast for 1 hour 30 mins. Add wine and 1 2/3 cups water and roast for another 30 mins. Remove turkey and some vegetables from pan and set aside.
- To serve, strain pan juices and season. Slice turkey then arrange on serving plates with reserved vegetables. Drizzle with pan juices.
