Thai Turkey Meatballs With Spicy Rice Noodles
- 1 1/2 lbs ground turkey
- 2 cloves garlic, crushed
- 5 None spring onions, sliced
- 2 oz fresh cilantro leaves, half finely chopped
- 1 None large red chili pepper, finely chopped
- 3 tbsp vegetable oil
- 1 bunch Chinese broccoli, trimmed, cut into 2 inch pieces
- 16 oz rice noodles
- 1/3 cup sweet chili sauce
- 2 tsp fish sauce
- 1/4 cup lime juice
- 1 oz fresh mint leaves
- For the meatballs, combine the turkey, garlic, 1/3 of the spring onion, the chopped cilantro and chili pepper in a large bowl. Roll level tablespoons of the mixture into balls. Heat oil in a large non-stick frying pan. Cook meatballs until browned all over and cooked through. Remove from pan and cover to keep warm.
- Add broccoli to the same pan and cook, stirring, until just tender.
- Meanwhile, separate the noodles in a bowl of hot water and let stand for 5 mins or until tender. Combine noodles with broccoli, sauces, lime juice, mint and remaining cilantro leaves and spring onion. Serve topped with the meatballs.
