Potato Waffles With Apple Compote
- 2 1/4 lbs tart apples, peeled, cored and chopped
- 3/4 cup apple juice
- 2 None cinnamon sticks
- 4 tbsp sugar
- 2 1/4 lbs potatoes, peeled, grated and placed in a colander to drain, potato water reserved
- 1 None onion, peeled and grated
- 2 None eggs
- 3 tbsp all-purpose flour
- 1 tsp salt
- None None Maple syrup, to serve
- Place the apples, apple juice, cinnamon sticks and sugar in a saucepan and bring to a boil, stirring. Simmer over a medium heat for 20 mins, stirring frequently. Remove from the heat and allow to cool. Remove the cinnamon sticks.
- Mix the potatoes and onion together. Add the potato water, eggs, flour and salt and mix well. Grease the waffle iron then preheat. Cook 4 waffles. Serve with the apple compote and maple syrup.
