Prosciutto Wrapped Steaks With Creamy Mushrooms
- 4 slices prosciutto
- 4 None rib eye steaks
- 2 tsp olive oil
- 1 tbsp chives, diced
- None None mashed potato, salad, to serve
- None None Mushrooms
- 3 tbsp butter
- 2 tbsp olive oil
- 1 lb thickly sliced mixed mushrooms
- 2 cloves garlic, crushed
- 1/2 cup white wine
- 2 tsp Dijon mustard
- 1/2 cup heavy cream
- Preheat grill on high. Wrap prosciutto around steaks, and brush with oil. Grill 3-4 minutes each side, until cooked to desired temperature. Rest, covered.
- To make mushrooms, heat butter and oil together in a large frying pan on high. Add mushrooms and cook, stirring, 3-4 minutes, until they begin to soften. Add garlic and cook 1 minute more. Blend in wine and mustard. Cook, stirring, until reduced by half. Pour in cream. Bring to a boil, stirring. Simmer 3-4 minutes, until thickened slightly. Season to taste.
- To serve, spoon creamy mushrooms over steak. Sprinkle with chives. Accompany with mashed potato and salad.
