Beef And Peanut Stir-Fry
- 2 tbsp peanut oil
- 1 lb beef rump steak, trimmed, thinly sliced
- 1 None onion, cut into wedges
- 1 tsp finely grated fresh ginger
- 4 None baby bok choy, leaves separated, washed
- 1 None carrot, peeled, cut into matchsticks
- 3 1/2 oz button mushrooms, halved
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp chili sauce
- 1/3 cup roasted peanuts
- None None Cooked hokkien noodles or spaghetti, to serve
- Heat half the oil in a wok or large skillet over high heat. Stir-fry beef in 2 batches for 1-2 mins, until browned. Set aside.
- Heat remaining oil in same wok on high. Stir-fry onion and ginger for 1 min. Add remaining vegetables and stir-fry for 2-3 mins, until tender.
- Return beef to wok with sauces and peanuts. Stir-fry for 1-2 mins, until heated through. Serve on a bed of hokkein noodles.
