Apple And Cinnamon Pancakes With Maple Syrup

  1. Sift flour, 1/4 cup sugar and cinnamon into a large bowl. Whisk together milk, egg yolk and canned apple filling then add to dry ingredients and mix until combined.
  2. Whip egg whites to soft peaks then fold gently into apple mixture.
  3. Heat a medium nonstick frying pan over medium-high heat. Pour 1/4-cupfuls of batter into pan. Cook until browned on both sides. Repeat with remaining batter to make a total of 8 pancakes.
  4. Cook apple wedges and remaining brown sugar over low heat, stirring, until apple caramelizes.
  5. Divide pancakes between serving dishes. Top with apple mixture then ice cream. Drizzle with maple syrup to serve.
