Banana, Date And Pecan Nut Bread
- 8 tbsp (1 stick) butter, at room temperature
- 3/4 cup packed brown sugar
- 3 None eggs
- 1 1/2 cups whole wheat self-rising flour
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup mashed bananas
- 1/2 cup flaked coconut
- 1/2 cup milk or buttermilk
- 1/3 cup chopped pecans
- 1/3 cup chopped dried pitted dates
- Preheat the oven to 350u0b0F. Lightly grease an 8 x 4-inch loaf pan.
- Beat the butter and sugar in a large bowl with an electric mixer until creamy. Add the eggs one at a time, mixing well after each addition.
- Sift flour and spices. Fold into batter with banana, coconut, milk, pecans and dates. Spoon into prepared pan.
- Bake for 50-60 mins or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
