New York Cheesecake
- 6 oz graham crackers, crushed
- 1/2 cup butter, melted
- 1 lb cream cheese, at room temperature
- 2/3 cup sour cream
- 1/2 cup granulated sugar
- 1 None lemon, juiced and zested
- 2 None large eggs
- None None whipped cream, to serve
- None None fresh berries, to serve
- Preheat oven to 300u0b0F. Lightly grease an 8 inch springform cake pan. Line base with foil. In a large bowl, combine graham cracker crumbs and butter. Press firmly into base of prepared pan and chill for 30 mins.
- Beat cream cheese until smooth. Add sour cream, sugar, lemon zest and lemon juice. Beat in eggs, 1 at a time, until combined. Transfer to prepared pan and bake for 50-60 mins, until just set (still slightly jiggly in the center). Turn off oven and let cake cool in oven with door ajar until cooled completely. Chill overnight.
- Serve in wedges with whipped cream and berries.
