Egg, Bacon And Leek Galette

  1. Preheat oven 350u0b0F. Line a baking tray with parchment paper.
  2. In a large frying pan, melt butter and oil over high heat. Saute leek for 1-2 mins, until tender. Add bacon and cook for 2-3 mins, until starting to brown. Set aside.
  3. Place pie dough on prepared baking tray. Trim into a round disc. Top with sliced tomato and cheese, leaving a 1 inch border. Spread leek mixture over top. Fold up edges, pleating, to enclose filling.
  4. Break eggs carefully on top of filling. Bake for 20-25 mins, until egg is set. Sprinkle with parsley. Serve with salad.
