Egg, Bacon And Leek Galette
- 2 1/2 tbsp butter
- 1 tbsp olive oil
- 1 None leek, trimmed, sliced
- 6 slices bacon, chopped
- 1 sheet frozen pie dough, thawed
- 1 None large tomato, sliced
- 1 oz grated Cheddar cheese
- 4 None large eggs
- None None chopped fresh parsley, to serve
- None None salad, to serve
- Preheat oven 350u0b0F. Line a baking tray with parchment paper.
- In a large frying pan, melt butter and oil over high heat. Saute leek for 1-2 mins, until tender. Add bacon and cook for 2-3 mins, until starting to brown. Set aside.
- Place pie dough on prepared baking tray. Trim into a round disc. Top with sliced tomato and cheese, leaving a 1 inch border. Spread leek mixture over top. Fold up edges, pleating, to enclose filling.
- Break eggs carefully on top of filling. Bake for 20-25 mins, until egg is set. Sprinkle with parsley. Serve with salad.
