Chorizo, Chickpea And Chili Stew
- 1 tbsp olive oil
- 1 None red onion, sliced
- 1 clove garlic, crushed
- 2 None red chilies, sliced
- 2 None chorizo sausages (about 9 oz), sliced
- 2 None potatoes, peeled, cubed
- 2 None carrots, sliced
- 1/2 tsp chilli flakes
- 1/4 cup tomato paste
- 2 x 14 oz cans chickpeas, rinsed, drained
- 2 cups vegetable stock
- 1 x 14 oz can crushed tomatoes
- None None Cilantro, to garnish
- Heat oil in a large frying pan on high.
- Saute onion, garlic and chili 1-2 mins, until tender and fragrant.
- Add chorizo, potatoes and carrots; saute 1-2 mins, until chorizo begins to brown. Add chili flakes and cook, stirring, 1 min.
- Stir in tomato paste. Add chickpeas, stock and tomatoes; season to taste.
- Bring to a boil. Reduce heat to low; simmer, covered, 25-30 mins.
- Serve with freshly picked cilantro leaves.
