Breaded Pork With Apples
- 1 None medium Bramley cooking apple, peeled, cored and diced
- 1 tbsp double cream or creme fraiche (optional)
- 75 g breadcrumbs
- 1 tbsp linseeds
- 4 None pork escalopes
- 1/4 tsp dried sage
- None None Plain flour, for dusting
- 1 None egg, beaten
- 4 tbsp rapeseed oil
- None None Knob of butter
- 2 None small eating apples, cored and cut into rings
- None None Light muscovado sugar, for sprinkling
- Place the apple in a saucepan with 1 tbsp water, cover and cook gently for 10 mins until very soft and pulpy. Remove from the heat and mash into a puree with a wooden spoon. Season with salt and black pepper and stir in the cream or sour cream, if using. Set aside.
- In a shallow dish, mix the breadcrumbs and flax seeds together. Season the pork with salt and black pepper and sprinkle with the sage. Lightly dust with flour, then dip into the egg and coat with the breadcrumb mixture. Heat the oil in a large frying pan and fry for 8-10 mins, or until cooked through, turning once. Remove from the pan and keep warm.
- Add the butter to the pan and cook the apple rings for 2-3 mins, turning, until they begin to soften. Sprinkle them with a little sugar on both sides and cook for 1-2 more mins, turning, until the sugar begins to caramelize. Serve with the pork and apple sauce.
