Spring Vegetable Tabbouleh

  1. Cook the bulgur according to package instructions. Drain and leave to cool. Cook the peas in boiling salted water for about 5 mins, drain and cool under running water.
  2. To assemble, stir the peas into the bulgur along with the pepper, tomato, spring onions, a little lemon zest and the juice. Add the herbs, some salt and pepper and the oil. Garnish with the reserved herbs.
