Easter Lamb Cake
- 2/3 cup butter
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 4 None eggs
- 1 cup all-purpose flour + 2 tbsp
- 1 cup cornstarch + 2 tbsp
- 3 tsp baking powder
- 2 cups ground hazelnuts
- None None powdered sugar, for dusting
- None None mini chocolate eggs, to decorate
- Preheat oven to 325u0b0F. Grease and flour a 68 oz lamb-shaped baking pan. Cream butter, sugar, vanilla extract and a pinch of salt. Add eggs, 1 at a time. Combine flour, cornstarch, baking powder and hazelnuts and fold in. Transfer to prepared pan and smooth. Place on a baking sheet. Bake for 50 mins, or until a skewer comes out clean.
- Allow to cool for 30 mins, then remove from pan and place on to a wire rack to cool completely. Dust with powdered sugar and tie a ribbon around the neck. Arrange on a cake plate, surrounded with mini chocolate eggs.
