Tex Mex Veggie Pies
- 1 tbsp olive oil
- 1 None red pepper, deseeded, chopped
- 1 None sweet potato, peeled, chopped
- 1 None onion, chopped
- 2 None tomatoes, chopped
- 14 oz can Mexican beans
- 5 oz Cheddar cheese, grated
- 4 sheets prepared puff pastry
- None None milk, for glazing
- 2 tbsp sesame seeds
- None None salad, to serve
- Preheat oven to 400u0b0F. Lightly grease 2 baking sheets. For the filling, heat oil in a frying pan on medium. Saute pepper, sweet potato and onion 2-3 mins, until onion is tender. Add tomatoes and cook 2 mins. Remove from heat and stir in beans and cheese. Season to taste.
- Cut each piece of pastry into 4 squares. Spoon 2 tbsp bean mixture into the center of each pastry square. Wet edges with a little water. Fold pastry over to form a triangle, pressing edges together with a fork to seal. Cut 2 or 3 slits in the top of each. Brush with a little milk and sprinkle with sesame seeds. Bake 15-20 mins. Serve with salad.
