Crispy Fish Pot Pies

  1. Preheat oven to 400u0b0F. Lightly grease 6 - 4.5 oz ramekins. Place on a baking tray.
  2. In a frying pan, heat butter and oil over high heat. Saute leek for 4-5 mins, until tender. Add flour and cook, stirring, for 1 min. Whisk in cream and wine until smooth then cook, stirring, until mixture boils and thickens. Reduce heat and add fish, lemon and saffron. Simmer for 4-5 mins, until seafood is cooked through. Add sweet potato and dill. Distribute between ramekins.
  3. Meanwhile, to make the topping, combine potato chips, cheese and breadcrumbs. Sprinkle over seafood and bake for 15-20 mins, until golden and bubbling.
  4. Serve with mixed greens.
