Potato, Pear And Bacon Casserole
- 1 2/3 lbs potatoes, peeled and chopped
- 1 tbsp sunflower oil
- 1 None onion, diced
- 4 tbsp chopped fresh thyme leaves
- 2 None ripe pears, sliced
- 1 1/3 lbs green beans, trimmed and halved
- 2/3 cup milk
- 2 tbsp butter
- 1 pinch grated nutmeg
- 3 tbsp chopped fresh parsley
- 2/3 cup vegetable stock
- 250 g bacon
- Cook the potatoes in a large pan of boiling, salted water for 20 mins. Meanwhile, heat the oil in a large saucepan and saute the onions for 5-6 mins. Deglaze the pan with 1 2/3 cups water, bring to a boil and season. Add the thyme, then cover the pan and simmer for 10 mins.
- Preheat the oven to 400u0b0F. Add the pears and green beans to the pan and simmer for 5-10 mins. Meanwhile, drain the potatoes and mash with the milk, butter and nutmeg.
- Transfer the mashed potatoes into a baking dish. Mix the parsley into the vegetables, then use a slotted spoon to transfer the vegetables into the baking dish on top of the potatoes. Pour over the vegetable stock, then lay the bacon on top. Bake for 30-40 mins, until the bacon is crisp.
