Beef And Mushroom Omelette

  1. Heat 2 tsp oil in a wok. Stir-fry beef until browned. Remove from wok. Add 2 tsp oil and stir-fry mushrooms until lightly browned. Add garlic and onions. Stir-fry until fragrant. Return beef to wok along with oyster sauce. Stir-fry until hot then season to taste. Remove from wok and cover to keep warm.
  2. Whisk eggs and soy sauce together. Add 1 tsp oil to wok then add 1/4 egg mixture, tilting wok to make an 8 inch omelette. Cook until almost set. Slide out onto a serving plate and top with 1/4 of the beef and 1/4 of the spinach. Fold omelette over to enclose filling. Repeat with remaining ingredients.
