Chocolate, Banana And Macadamia Muffins
- 2 1/2 cups self-rising flour
- 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 3/4 cup brown sugar
- 1 cup buttermilk
- 2 None medium bananas, mashed
- 2 None large eggs, lightly beaten
- 2/3 cup vegetable oil
- 5 oz macadamias, toasted, chopped
- 3 oz semi-sweet chocolate, grated
- Preheat oven to 350u0b0F. Line a 12-hole muffin pan with paper liners.
- Sift flours and baking soda into a large bowl. Stir in sugar.
- In a large bowl, whisk together buttermilk, banana, egg and oil. Fold into dry ingredients and stir in macadamias and chocolate. Do not over mix.
- Spoon into paper liners until each is 2/3 full. Bake for 20-25 minutes until a skewer inserted in the center comes out clean. Allow to cool, then store in an airtight container.
