Madeira Loaf Cakes
- 1/2 cup self-rising flour
- 1 1/4 cup ground almonds
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1 3/4 cup unsalted butter, softened
- 3 None eggs, lightly beaten
- 1 None lemon, zested
- 1/3 cup milk
- 1 tsp vanilla extract
- 3 oz raisins
- 1/3 cup apricot jam, warmed and strained
- Preheat oven to 350u0b0F. Lightly grease 8 mini loaf pans. Line bases and long sides with parchment paper, extending 2/3 inch above edges.
- In a food processor, combine all ingredients except raisins and jam. Pulse until just combined. Add raisins then distribute batter between loaf pans and bake for 15-20 mins, until a skewer inserted in the center comes out clean. Let cool in pans for 10 mins then transfer to a wire rack. Brush warm cakes with jam.
