Madeira Loaf Cakes

  1. Preheat oven to 350u0b0F. Lightly grease 8 mini loaf pans. Line bases and long sides with parchment paper, extending 2/3 inch above edges.
  2. In a food processor, combine all ingredients except raisins and jam. Pulse until just combined. Add raisins then distribute batter between loaf pans and bake for 15-20 mins, until a skewer inserted in the center comes out clean. Let cool in pans for 10 mins then transfer to a wire rack. Brush warm cakes with jam.
