Steak With Tomato, Onion And Red Wine Sauce
- 1 1/2 lbs potatoes, cut into wedges
- 1 tbsp olive oil
- 1 medium red onion, thinly sliced
- 1 clove garlic, crushed
- 4 medium ripe tomatoes, coarsely chopped
- 1/2 cup red wine
- 4 None rib-eye steaks
- None None Mixed salad, cherry tomatoes, to serve
- Preheat the oven to 400u0b0F. Lightly grease a baking pan.
- Place potato wedges on prepared pan. Lightly spray with no stick cooking spray; season to taste. Bake 30 mins, until tender and golden.
- Meanwhile, heat olive oil in a medium saucepan on medium heat. Saute onion and garlic 2-3 mins, until tender. Add tomatoes and wine. Bring to a boil. Reduce heat to low; simmer, uncovered, 8-10 mins, until thickened. Season to taste.
- Heat a large oiled skillet on medium-high heat. Cook steaks 2-3 mins each side, until cooked to desired doneness. Let stand, loosely covered with foil, 5 mins.
- Serve steaks with sauce, potato wedges, salad and cherry tomatoes.
