Greek Souvlaki Wraps

  1. Toss lamb with seasoning mix and 1-2 tbsp olive oil. Set aside.
  2. Place yogurt in a small serving bowl. Add minced garlic and mix until combined. Season to taste and set aside.
  3. In a medium bowl, combine parsley, cucumbers, tomatoes and spring onions. Season to taste and set aside.
  4. Heat a grill pan or nonstick frying pan over high heat. Cook lamb for 3-5 mins per side, or until tender and browned. Let rest for 5 mins then slice thinly.
  5. Spread garlic yogurt over pitas. Top with parsley salad and lamb then roll up tightly. Serve with lemon wedges.
