Fish And Chips Shepherd'S Pies

  1. Preheat oven to 350u0b0F. Lightly grease 6 - 8 oz ramekins. Season fish. Place in a baking dish and pour milk over top. Bake for 15 mins, or until just cooked through. Drain milk into a measuring cup. Reserve. Break fish into large flakes.
  2. Meanwhile, to make the potato topping, bring potatoes to a boil in salted water. Cook for 15-20 mins. Drain then mash with milk and butter. Season to taste.
  3. To make the sauce, melt butter in a medium saucepan over high heat. Stir in flour and cook, stirring, for 1 min, or until bubbling. Combine milk with reserved milk from cooking fish and blend into flour mixture until smooth. Cook, stirring, until mixture boils and thickens. Simmer for 3 mins. Season to taste.
  4. Add fish, vegetables, eggs, parsley and lemon juice to sauce. Season to taste. Distribute between ramekins and top with mashed potatoes. Sprinkle with cheese and bake for 5 mins.
  5. Arrange French fries on top of pies and bake for 5-10 mins, until golden brown and heated through.
