Fish And Chips Shepherd'S Pies
- 7 oz cod or other white fish, bones removed
- 7 oz salmon, skin and bones removed
- 2.5 oz frozen mixed vegetables
- 2 None hard-boiled eggs, peeled, chopped
- 2 tbsp chopped fresh flat-leaf parsley leaves
- 1 None lemon, juiced
- 2 oz Cheddar cheese, grated
- 1.5 oz cooked French fries
- None None FOR THE POTATO TOPPING
- 4 None medium-sized potatoes, peeled, chopped
- 1/2 cup milk
- 3 1/2 tbsp butter
- None None FOR THE SAUCE
- 4 tbsp salted butter
- 2 tbsp all-purpose flour
- 1 1/4 cups milk, warmed
- Preheat oven to 350u0b0F. Lightly grease 6 - 8 oz ramekins. Season fish. Place in a baking dish and pour milk over top. Bake for 15 mins, or until just cooked through. Drain milk into a measuring cup. Reserve. Break fish into large flakes.
- Meanwhile, to make the potato topping, bring potatoes to a boil in salted water. Cook for 15-20 mins. Drain then mash with milk and butter. Season to taste.
- To make the sauce, melt butter in a medium saucepan over high heat. Stir in flour and cook, stirring, for 1 min, or until bubbling. Combine milk with reserved milk from cooking fish and blend into flour mixture until smooth. Cook, stirring, until mixture boils and thickens. Simmer for 3 mins. Season to taste.
- Add fish, vegetables, eggs, parsley and lemon juice to sauce. Season to taste. Distribute between ramekins and top with mashed potatoes. Sprinkle with cheese and bake for 5 mins.
- Arrange French fries on top of pies and bake for 5-10 mins, until golden brown and heated through.
