Cajun Spiced Chicken Burgers
- 1 1/3 lbs ground chicken
- 2 tbsp all-purpose flour
- 1 tbsp cajun seasoning
- 1 tbsp vegetable oil
- 1 None medium green pepper, deseeded and sliced thinly
- 1 None medium tomato, quartered and sliced thinly
- 1 stalk celery, trimmed and sliced thinly
- 2 None scallions, sliced thinly
- 2 tbsp flat-leaf parsley, coarsely chopped
- 1 tbsp white wine vinegar
- 1 tsp wholegrain mustard
- 1 loaf bread, such as ciabatta
- 4 leaves butter lettuce
- 2 tbsp mayonnaise
- Place the chicken in a medium bowl and season to taste. Shape the mixture into four large patties. Mix the flour and cajun seasoning in a bowl, then coat the the patties in the mixture, discarding the excess flour.
- Heat a large non-stick frying pan and add the oil. Cook the patties until browned on both sides and cooked through.
- Meanwhile, combine the pepper, tomato, celery, scallions, parsley, vinegar, and mustard in a medium bowl and season to taste. Cut the bread into four pieces, then halve each piece horizontally. Toast, cut side up, under a preheated broiler.
- Layer four toasted bread pieces with lettuce, pepper mixture, patties and mayonnaise. Top with the remaining bread slices.
