Cajun Spiced Chicken Burgers

  1. Place the chicken in a medium bowl and season to taste. Shape the mixture into four large patties. Mix the flour and cajun seasoning in a bowl, then coat the the patties in the mixture, discarding the excess flour.
  2. Heat a large non-stick frying pan and add the oil. Cook the patties until browned on both sides and cooked through.
  3. Meanwhile, combine the pepper, tomato, celery, scallions, parsley, vinegar, and mustard in a medium bowl and season to taste. Cut the bread into four pieces, then halve each piece horizontally. Toast, cut side up, under a preheated broiler.
  4. Layer four toasted bread pieces with lettuce, pepper mixture, patties and mayonnaise. Top with the remaining bread slices.
