Date Scones With Whipped Vanilla Butter
- 2 1/2 tbsp unsalted butter, softened
- 1/4 cup light brown sugar
- 1 None large egg yolk
- 2 2/3 cups self-rising flour, sifted
- 2 oz finely chopped pitted dates
- 1 1/4 cups buttermilk, a little reserved for brushing
- -1 None Whipped Vanilla Butter
- 12 tbsp unsalted butter, softened
- 2 tsp vanilla extract
- Preheat oven to 425u0b0F. Grease an 8 inch square cake pan.
- Beat butter, sugar and egg yolk until light and fluffy. Add flour, dates and buttermilk. Mix until just combined. Turn dough out onto a floured work surface and knead gently until smooth. Press out into an 8 inch square. Cut into 9 squares then cut each square in 1/2 diagonally. Place scones, side-by-side, just touching, in pan. Brush with a little extra buttermilk and bake for 20 mins.
- Meanwhile, to make the whipped vanilla butter, beat butter and vanilla until light and fluffy.
- Serve warm scones with whipped butter.
