Date Scones With Whipped Vanilla Butter

  1. Preheat oven to 425u0b0F. Grease an 8 inch square cake pan.
  2. Beat butter, sugar and egg yolk until light and fluffy. Add flour, dates and buttermilk. Mix until just combined. Turn dough out onto a floured work surface and knead gently until smooth. Press out into an 8 inch square. Cut into 9 squares then cut each square in 1/2 diagonally. Place scones, side-by-side, just touching, in pan. Brush with a little extra buttermilk and bake for 20 mins.
  3. Meanwhile, to make the whipped vanilla butter, beat butter and vanilla until light and fluffy.
  4. Serve warm scones with whipped butter.
