Date And Walnut Oat Bread
- 3 1/2 cups rolled oats
- 1 cup all-purpose flour + 2 tbsp
- 1 cup whole wheat flour + 2 tbsp
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp granulated sugar
- 5 oz pitted dates, coarsely chopped
- 1/2 cup walnuts, coarsely chopped
- 1 3/4 cups buttermilk
- None None butter, to serve
- Preheat oven to 375u0b0F. Grease a baking tray.
- Process oats until fine. Combine with flour, baking powder, baking soda, sugar, dates, walnuts and 1 tsp salt. Add buttermilk and mix until combined. Turn out onto a floured surface and knead into an 11 inch loaf. Using a small knife, make five 1/3 inch-deep slashes across top of loaf. Place on prepared tray. Bake for 1 hour.
- Wrap in a clean tea towel to cool. Cut into thick slices and serve with butter.
