California Brownies

  1. Preheat oven to 350u0b0.
  2. Spray, then flour two 9 x 9-inch pans. Melt butter and chocolate over low heat.
  3. Cool.
  4. Beat eggs, sugar and vanilla with electric mixer on medium speed for 3 minutes. Stir in butter-chocolate mixture, then slowly add the flour.
  5. Do not overmix.
  6. Fold in the cookie crumbs and most of the pecans. Spread the batter evenly into the pans and sprinkle with the remaining pecans.
  7. Bake about 40 minutes or until set.
  8. (The brownies will be soft in the center).
  9. Let cool completely, cut into 3 x 3-inch squares.
  10. Makes 18 brownies.
  11. For extra-rich results, use chocolate bars instead of Baker's chocolate.
