California Brownies
- 6 oz. bittersweet chocolate
- 1 c. unsalted butter
- 4 large eggs
- 2 1/4 c. granulated sugar
- 1 tsp. vanilla extract
- 1/2 c. plus 2 Tbsp. (5 oz.) flour
- 1/2 c. chopped pecans
- 1 c. chocolate chip cookie crumbs (about 10 cookies crushed)
- vegetable oil spray and flour for pans
- Preheat oven to 350u0b0.
- Spray, then flour two 9 x 9-inch pans. Melt butter and chocolate over low heat.
- Cool.
- Beat eggs, sugar and vanilla with electric mixer on medium speed for 3 minutes. Stir in butter-chocolate mixture, then slowly add the flour.
- Do not overmix.
- Fold in the cookie crumbs and most of the pecans. Spread the batter evenly into the pans and sprinkle with the remaining pecans.
- Bake about 40 minutes or until set.
- (The brownies will be soft in the center).
- Let cool completely, cut into 3 x 3-inch squares.
- Makes 18 brownies.
- For extra-rich results, use chocolate bars instead of Baker's chocolate.
