Curried Squash With Mushrooms
- 1 tbsp peanut oil
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1 tsp ground caraway
- 1 tsp ground nutmeg
- 1 tsp mild curry powder
- 1/2 tsp ground turmeric
- 1 None medium Spanish onion, sliced thinly
- 1 None medium carrot, sliced thinly
- 10.5 oz yellow squash, quartered
- 1 None medium green pepper, sliced thinly
- 7 oz button mushrooms, halved
- 1 tsp cornstarch
- 3/4 cups coconut cream
- 1 tbsp fresh cilantro leaves, finely chopped
- Heat oil in a wok or large frying pan over medium heat. Stir-fry garlic and spices until fragrant.
- Add onion and carrot. Stir-fry until onion is soft. Add squash, pepper and mushrooms. Stir-fry until tender.
- Mix together cornstarch and coconut cream then stir until mixture boils and thickens slightly. Serve sprinkled with cilantro.
