Chocolate Melting Moments With Coffee Cream

  1. Preheat oven to 325u0b0F. Lightly grease and line 2 baking trays with parchment paper.
  2. Cream butter, powdered sugar and vanilla until light and fluffy. Sift together flour, cornstarch and cocoa powder then fold in. Transfer to a piping bag fitted with a 2/3 inch star tip. Pipe out 28 - 2 inch wide cookies, around 1 inch apart, on prepared trays. Bake for 15-20 mins, until slightly firm. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
  3. Meanwhile, to make the coffee filling, cream all ingredients until pale.
  4. Sandwich cookies together with coffee cream. Dust tops with cocoa powder. Serve.
