Chicken Meatball Pasta
- 1 lb ground chicken
- 1 None onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp chopped fresh basil, plus extra leaves for garnish
- 2 tbsp olive oil
- 2 cups pasta sauce
- 13 oz fusilli pasta
- None None grated Parmesan cheese, to serve
- In a large bowl, combine ground chicken, onion, garlic and basil. Season. Roll into walnut-sized meatballs and arrange on a baking tray. Chill for 15 mins.
- Heat oil in a large frying pan over high heat. Cook meatballs for 4-5 mins, until browned on all sides. Drain on paper towels.
- Combine pasta sauce and 1 cup water in a large frying pan. Bring to a boil then add meatballs. Reduce heat and simmer for 8-10 mins, until meatballs are cooked through.
- Meanwhile, cook pasta in boiling salted water until al dente. Drain and toss with sauce. Serve topped with basil and Parmesan.
