Chocolate Covered Mint Cookies

  1. Beat butter, sugar, egg and vanilla extract in medium bowl with electric mixer until combined. Stir in sifted flour, cocoa powder and enough milk to make a firm dough. Cover; refrigerate for 30 mins.
  2. Preheat the oven to 350u0b0F. Lightly grease and line 2 baking pans with parchment paper. Roll dough between sheets of parchment paper until 1/4-inch thick. Using 1 1/4-inch round cookie cutter, cut rounds from dough. Place rounds about 1 inch apart on prepared pans.
  3. Bake for about 10 mins. Immediately place 1 chocolate mint on top of each cookie, pressing down lightly. Cool in pan 2 mins. Remove from pan; cool completely on wire rack.
  4. Place a sheet of parchment paper under the wire racks. Drizzle cookies with chocolate. Let stand at room temperature until set.
