Ground Chicken Lettuce Cups

  1. Combine the stock, cornstarch and sauces in a small bowl.
  2. Heat a wok or large skillet on high heat. Add the oil and swirl to coat. Add the garlic, ginger and ground chicken. Stir-fry for 5 mins, breaking up any lumps, or until the chicken is well browned.
  3. Add the water chestnuts and sauce mixture. Stir-fry for 1-2 mins, or until the sauce thickens. Remove from the heat. Add the onions and toss to combine. Season.
  4. Place the lettuce leaves on plates. Fill with chicken mixture. Drizzle with hoisin sauce. Top with radish and cilantro. Serve immediately.
