Turkey Spaghetti Sauce
- 3/4 c. chopped onion
- 1 clove garlic, minced
- 3 Tbsp. olive oil
- 1 1/2 lb. ground turkey
- 28 oz. can tomatoes, undrained and chopped
- 2 (6 oz.) cans tomato paste
- 1 c. water
- 1 bay leaf
- 1 1/2 tsp. ground oregano
- pinch of dried whole basil
- 1/2 lb. mushrooms, sliced
- 2 Tbsp. grated Parmesan cheese
- salt and pepper to taste
- hot spaghetti
- Saute onion and garlic in oil in Dutch oven until onion is tender; add turkey.
- Cook until done, stirring to crumble meat. Stir in next 9 ingredients.
- Simmer, uncovered, for 1 hour.
- Add mushrooms and cheese; simmer, uncovered, for 20 minutes.
- Remove bay leaf.
- Serve over hot spaghetti.
- Yields 6 1/2 cups sauce.
