Gingerbread Cookies
- 1/3 cup golden syrup or corn syrup
- 1/4 cup brown sugar
- 1 tbsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1 tsp baking soda
- 1/2 cup unsalted butter, chopped
- 1 None large egg, lightly beaten
- 3 cups all-purpose flour, sifted
- None None Colored icing and sprinkles, for decorating
- Preheat the oven to 325u0b0F. Grease 2 baking sheets and line with parchment paper.
- Place the golden syrup, brown sugar, ginger, cinnamon and cloves in a heatproof bowl and mix. Place the bowl over a saucepan of simmering water and stir until the sugar has dissolved and the ingredients are combined. Add the baking soda.
- Place the butter in a large bowl. Pour in the golden syrup mixture and stir until the butter has melted and the mixture is smooth. Allow to cool.
- Add the egg and 1 cup of flour and mix well. Add the remaining flour and use hands to mix to a dough. Knead gently on a lightly floured work surface until the dough is soft and smooth. Roll out the dough between 2 sheets of parchment paper to a 1/4 inch thickness.
- Using a gingerbread man cookie cutter, cut out 14 cookies. Place on baking sheets and bake for 10-15 mins, until golden and firm to the touch. Allow to cool completely on wire racks before decorating.
