Tortilla-Crusted Turkey With Rice Salad
- 6 oz tortilla chips
- 4 None turkey breast steaks
- 1/3 cup flour
- 3 tsp taco seasoning
- 2 None eggs, beaten
- None None Oil, for shallow-frying
- None None FOR THE SALAD
- 2 cups cooked rice
- 1 None tomato, chopped
- 1 None avocado, peeled, pitted and chopped
- 2 None green onions, sliced
- 1 None lime, peel finely grated and lime juiced
- None None Tabasco sauce, to taste
- Process tortilla chips to crumbs. Place turkey steaks between 2 sheets plastic wrap and pound with a rolling pin until 1/4-inch thick.
- Mix flour with 2 tsp taco seasoning. Dust turkey in seasoned flour, shaking off excess. Dip in egg. Roll in tortilla crumbs to coat.
- Heat oil in a large skillet on high heat, until a few crumbs sizzle as soon as they're added. Cook turkey for 2-3 mins each side, until crisp and golden. Drain on paper towels.
- Meanwhile, for the salad, combine all ingredients in a large bowl. Serve turkey with salad and lime wedges.
