Tortilla-Crusted Turkey With Rice Salad

  1. Process tortilla chips to crumbs. Place turkey steaks between 2 sheets plastic wrap and pound with a rolling pin until 1/4-inch thick.
  2. Mix flour with 2 tsp taco seasoning. Dust turkey in seasoned flour, shaking off excess. Dip in egg. Roll in tortilla crumbs to coat.
  3. Heat oil in a large skillet on high heat, until a few crumbs sizzle as soon as they're added. Cook turkey for 2-3 mins each side, until crisp and golden. Drain on paper towels.
  4. Meanwhile, for the salad, combine all ingredients in a large bowl. Serve turkey with salad and lime wedges.
