Sea Fare(Seafood Florentine Bake)
- 2 lb. fish fillets (flounder, haddock, pollock, etc.)
- 1 tsp. salt
- 1/2 tsp. onion powder
- 1/2 tsp. pepper
- 1 can cream of shrimp or Cheddar cheese soup
- 1 pkg. frozen, chopped spinach, thawed and drained
- 2 c. Bisquick or Jiffy baking mix
- 1/3 c. grated Parmesan cheese
- 1 c. milk
- 2 eggs
- Preheat
- oven to 350u0b0.
- Arrange fish fillets in greased 13 x 9-inch baking dish.
- Sprinkle with salt, onion powder and pepper. Spoon
- soup
- over
- fillets.
- Top
- with spinach.
- Beat remaining ingredients with wire whisk until smooth.
- Pour over spinach. Bake,
- uncovered,
- about
- 40 minutes or until top is golden brown.
- Let
- stand 10 minutes before serving.
- Makes 8 servings.
