Red Rice Stove Top Or Oven Baked
- 5-6 strips of bacon
- 1/2 box of Roger Wood sausage
- 1/2 cup of bell pepper
- 1/2 cup of celery
- 1/2 cup of onion
- 15 oz. can of tomato sauce
- 14.5 can diced tomatoes
- 1 1/2 cups of water
- 1 6 oz. can tomato paste
- 1 tsp. sugar
- 3 cups rice
- 1 tsp. salt (to taste)
- 1 tsp. pepper (to taste)
- 1 tsp. lemon pepper (optional)
- basil (optional)
- dash Tabasco to taste (optional)
- Fry bacon to extract oil.
- Slice and cook sausage in bacon grease.
- After sausage is cooked, add vegetable and saut.then, add liquid ingredients and seasonings.
- Bring to a boil.
- Taste sauce and add seasonings as necessary.
- Make sure that your sauce is tasty and well cooked before moving on.then add rice.the ratio of sauce to rice should be 2:1.
- If desire oven bake, cook rice to a boil in sauce mixture.
- Place mixture in roasting pan with a lid.
- Bake at 350 degrees for 45 minutes or until rice is fluffy.
- If desire stove top, bring sauce mixture to a boil.
- Cut the heat to low after a boil is reached and allow to steam with a lid on it until rice is fluffy.
- Serve with fried chicken and Southern potato salad.
