Beef And Bean Burritos

  1. For the guacamole, mash the avocados in a bowl. Add tomatoes, cilantro, lime juice and hot sauce and mix until well blended. Place a piece of plastic wrap directly on the surface of the guacamole. Refrigerate until ready to serve.
  2. Heat the oil in a large skillet on high heat. Add the beef and onions in batches and saute for 4-5 mins until well browned. Stir in the beans, 1 cup water and Mexican seasoning. Bring to a boil, stirring. Reduce the heat to low and simmer for 2 mins until thickened.
  3. Meanwhile, warm the tortillas according to the package directions. Place a lettuce leaf on each tortilla. Top with beef mixture and sprinkle with cheese. Roll tortillas up securely. Halve and serve with the guacamole.
