Chocolate Brownies With Raspberries, Salted Pretzels And Marshmallows
- 1 1/4 cups butter, softened
- 1 1/3 lbs dark chocolate, coarsely chopped
- 5 None eggs
- 1 2/3 cups sugar
- 1 tbsp simple syrup
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 lb frozen raspberries
- 1 cup heavy cream
- 1 tbsp coconut oil
- 2 oz mini marshmallows
- 5 oz salted mixed nuts
- 5 oz salted pretzels
- Preheat the oven to 350u0b0F. Melt the butter and 1 lb of chocolate in a saucepan over a low heat. Mix the eggs, a pinch of salt and sugar with the an electric mixer for 5 mins until creamy. Stir in the syrup. Mix the flour and baking powder in a bowl. Stir the chocolate and butter mixture into the egg mixture and fold in the flour. Fold in the raspberries, pour the brownie mixture into a greased and floured baking tray and smooth it over. Bake for about 35 mins. When the brownies are done, chill in the fridge for at least 4 hours.
- Melt the remaining chocolate with the cream and coconut oil over a low heat in a saucepan. Leave the mixture to cool for 10-15 mins and spread it on the brownie. Sprinkle with marshmallows, nuts, and pretzels and chill the cake for another 1-2 hours before cutting it into pieces.
