Onion And Bacon Tart
- 2 cups all-purpose flour
- 1/2 cup chilled butter, cubed
- 1/3 cup milk
- None None For the Filling
- 2 tbsp olive oil
- 3 None onions, thinly sliced
- 1 None red onion, thinly sliced
- 4 slices bacon, cut into strips
- 1 sprig rosemary, leaves strips
- 2 oz camembert cheese, sliced
- None None mixed salad, to serve
- Preheat oven to 400u0b0F. Line a baking sheet with parchment.
- Sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Add milk gradually until dough forms. Turn out onto lightly floured surface and knead lightly. Shape into a disc. Wrap in plastic wrap and chill 20 minutes.
- To make filling: heat oil in a large skillet on low. Saute onions 10-15 minutes, until golden and caramelized. Increase heat to medium. Add bacon and cook 4-5 minutes. until browned. Stir in rosemary and season to taste. Allow to cool.
- Roll out pastry between 2 sheets of parchment to an 11-inch circle. Transfer to baking sheet. Pile onion mixture onto pastry, leaving a 2-inch border. Fold edges over filling. Top with cheese. Bake 25-30 minutes, until crust is golden. Serve warm with salad.
