Oatmeal Cookies With Dark Chocolate Drizzle
- 7 tbsp butter, chopped
- 2 tbsp golden syrup
- 1/3 cup rolled oats
- 2 oz dessicated coconut
- 1 cup flour
- 1/3 cup firmly packed brown sugar
- 3/4 cup sugar
- 2 tsp baking soda
- 2 tbsp boiling water
- 6 oz dark chocolate
- Preheat oven to 350u0b0. Line 2 baking sheets with parchment paper. For the dough, heat butter and golden syrup in saucepan over medium-high heat and bring to a gentle simmer. In a large bowl, stir together oats, coconut, flour and sugars. In a separate small bowl, combine boiling water and baking soda. Add to butter mixture and stir to combine. Add to oat mixture and stir to combine.
- Roll dough into 20 balls and arrange on baking sheets. Flatten slightly with palm of your hand. Bake 20-25 mins, switching position of baking sheets after 14 mins. Cool 10 mins on baking sheets then transfer to wire racks to cool completely.
- For the topping, melt chocolate in microwave on medium heat 2-3 mins, stirring once or twice. Place wire rack over cookies and, using a fork, drizzle with chocolate in a fast back-and-forth motion. Chill to set, then serve.
