Neapolitan Style Chicken With Pasta
- 2 tbsp olive oil
- 4 None chicken breast, about 5 oz each
- 1 None large onion, peeled and chopped
- 1 None green pepper, deseeded and chopped
- 3 tbsp sundried tomato pesto
- 14 oz can chopped tomatoes
- 1 tsp sugar
- 2/3 cup red wine or water
- 3 oz pitted black olives
- None None cooked pasta, to serve
- None None parsley leaves, to serve
- Heat the oil in a large pan. Add the chicken and cook 8-10 mins, turning once, until golden. Add the onion and pepper and cook 5 more mins. Add the pesto, tomatoes, sugar and wine or water. Bring to a boil then reduce heat and simmer 20 mins, until the chicken is tender and cooked through. Stir in olives then season with salt and black pepper. Toss with the pasta and sprinkle with parsley to serve.
