Ginger Chicken Noodles
- 2 None chicken breasts, halved horizontally
- 9 oz soba noodles, cooked
- 5.25 oz snow peas, trimmed, sliced
- 1 None carrot, peeled, julienned
- 2 stalks celery, julienned
- 3 None spring onions, sliced
- None None Dressing
- 2 tbsp avocado oil
- 2 tbsp soy sauce
- 2 tbsp rice wine vinegar
- 2 tbsp pickled ginger, finely shredded
- 1 tsp wasabi paste
- 1 tsp sesame oil
- None None fresh cilantro leaves, to serve
- Heat a large frying pan over high heat. Lightly coat chicken with olive oil and season. Cook for 2-3 mins per side, or until cooked through. Let cool slightly then slice into strips. Combine with noodles and vegetables.
- Meanwhile, to make the dressing, whisk together all ingredients. Drizzle 1/2 over chicken salad and toss to combine. Drizzle remaining dressing over top and sprinkle with cilantro to serve.
