Cheese, Corn And Salami Muffins
- 2 1/2 cups self-rising flour
- 1/2 cup sliced salami or pepperoni, chopped
- 1/2 cup grated Cheddar cheese
- 2 tbsp snipped fresh chives
- 8 tbsp (1 stick) butter, melted
- 1/2 cup canned creamed corn
- 1/4 cup milk
- 1 None egg, lightly beaten
- Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- Sift flour into a large bowl. Add salami, cheese and chives, mixing well. In a separate bowl, whisk together butter, creamed corn, milk and egg. Season to taste.
- Make a well in the center of dry ingredients. Add milk mixture all at once. Mix lightly, until just combined. Do not over-mix. Spoon into muffin pan, filling cups two-thirds full.
- Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
