Cheese, Corn And Salami Muffins

  1. Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
  2. Sift flour into a large bowl. Add salami, cheese and chives, mixing well. In a separate bowl, whisk together butter, creamed corn, milk and egg. Season to taste.
  3. Make a well in the center of dry ingredients. Add milk mixture all at once. Mix lightly, until just combined. Do not over-mix. Spoon into muffin pan, filling cups two-thirds full.
  4. Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
