Loukaniko Sausage And Feta Tarts

  1. Preheat oven to 400u0b0F. Place a baking sheet on middle rack to preheat. Grease 6 cups of a large muffin pan.
  2. Cut pastry into 6 equal squares. Line each muffin cup with a pastry square. Place on baking sheet in oven; bake 4-5 minutes, until golden.
  3. Meanwhile, in a large skillet, heat oil on high. Cook sausage and leek 2-3 minutes, until leek is tender. Add garlic; cook 30 seconds. Stir in peas. Cool slightly.
  4. Divide leek mixture among pastry shells. Fill evenly with egg; season to taste. Top with feta.
  5. Reduce oven to 250u0b0F.
  6. Bake tarts 15-20 minutes, until set in center. Serve warm or cold with salad.
