Loukaniko Sausage And Feta Tarts
- 1 1/2 sheets frozen puff pastry, thawed
- 1 tbsp olive oil
- 4 1/2 oz thinly sliced loukaniko Greek sausage
- 1 None leek, thinly sliced
- 1 clove garlic, minced
- 1/2 cup frozen peas
- 6 large eggs, lightly beaten
- 2 oz feta, crumbled
- None None Salad, to serve
- Preheat oven to 400u0b0F. Place a baking sheet on middle rack to preheat. Grease 6 cups of a large muffin pan.
- Cut pastry into 6 equal squares. Line each muffin cup with a pastry square. Place on baking sheet in oven; bake 4-5 minutes, until golden.
- Meanwhile, in a large skillet, heat oil on high. Cook sausage and leek 2-3 minutes, until leek is tender. Add garlic; cook 30 seconds. Stir in peas. Cool slightly.
- Divide leek mixture among pastry shells. Fill evenly with egg; season to taste. Top with feta.
- Reduce oven to 250u0b0F.
- Bake tarts 15-20 minutes, until set in center. Serve warm or cold with salad.
